I'm building a new PC and I'm using the new MSI Z390, a pro motherboard with an M.2 SSD slot. I bought a Samsung Evo SSD for that slot, do I need any other drives apart from that SSD or can I mount everything on the M.2 SSD and have no other drives?

That depends entirely on the capacity of the SSD and whether it will hold any current data you have. If you have no current data to transfer over and you're creating a system from scratch, it sounds like you're asking whether the SSD you bought will be enough for what you're going to be using it for, in which case, it depends entirely on what you're going to be using it for.
