How can I bypass/ignore the 'grub-efi-amd64' failed to isntall into /target/ error?

On a new Mint 19.1 install, I get:



The package grub-efi-amd64-signed
failed to install into /target/.
With the GRUB boot loader, the
installed system will not boot.


I've found similar questions on this, but can't get this working on a new Mint 19.1 install.



I've created a partition, formatted it manually as vfat, and choose type of efi in the installer.



The issue is that I don't care that the bootloader didn't install, I just need the install wizard to finish so I can reboot and fix it manually.



But as soon as this error pops ups, the only option is "OK" and that immediately crashes the installer.



How can I ignore or bypass this?
