Set taskbar icon for Chrome's kiosk mode

I'm using Ubuntu. I'm running an app in Chromium's kiosk mode. The app's app.desktop file contains this:
Icon=/foo/bar/baz/someicon.png
This works. And the appmenu/activities panels show the app with the correct icon.
However, when running, the taskbar shows the Chromium icon instead. This is confusing when I also have a Chromium window(s) open, as they all have the same icon.
How do I fix this?
