New Ubuntu Server installation Q

Is there any mechanism/method to predefine the packages that will be installed during the Ubuntu server installation process?
For me it seems the newest version(s) include much of what I don't want and none of what I do (or something like that).
Just wondering if someone has come across that before and would be willing to share?

Seems like you might want to try the Minimal Image and add only the services you want.
