Can't change default program for most extensions (Windows 10)

I can't seem to change the default program used to open most file extensions. It's pretty weird.



I can edit the default program for .json files and .pdf files, I have found so far. But for .rar files, .R files and pretty much every arbitrary file extension, I cannot change it.



I have tried simply going through Open with -> Choose other app, and I've tried setting it in the properties of a file, I've tried going through Settings -> Apps -> Default apps, I've tried messing with some registry keys (HKCUSoftwareMicrosoftWindowsCurrentVersionExplorerFileExts* mostly). Nothing seems to fix my issue.



Do any of you lovely people have any clue what I could try next?
